A Retro-Recipe Vanilla Pudding
There is something about summer that makes me feel nostalgic. I was looking through my 1950's Betty Crocker cookbook and saw this recipe for Cornstarch Custard. That sounds pretty grim but actually it's Vanilla Pudding!
When I was a kid, my Mom used Jello Pudding mix to make Vanilla Pudding. I don't know why she didn't make it from scratch, it's so easy. Here's the recipe straight from Betty Crocker:
Mix together in a saucepan....
1/4 cup sugar
2 Tablespoons cornstarch (cornflour)*
1/4 teaspoon salt
1 egg
Stir in gradually.....
2 cups milk
Cook over a low heat, stirring constantly until mixture boils. Boil 1 minute (until the pudding is thick).
Blend in....
1 tablespoon butter (if desired)
1 1/2 teaspoon vanilla
The recipe book says to pour the pudding into sherbert glasses and chill. I used small jars with screw on lids to make a sort of home made pudding pot, perfect for picnics.
Summertime makes me nostalgic and eating Vanilla Pudding makes me feel like a kid again!
Oh, it's pretty much the same as the set custard I use for the top of trifle! btw it would also be very good frozen on lolly sticks xx

ReplyDeleteWe also make chocolate pudding and a brown sugar butterscotch pudding. I think it would be great to experiment with different flavours. Maybe a big spoonful of strawberry jam stirred into it while it's warm? : )
DeleteLove the idea of putting this in little jars. I bet it is delicious with fruit. Am I right in thinking this is a bit like English custard? But thicker maybe?
ReplyDeleteIt's a lot like English custard except it doesn't require as many egg yolks so it isn't as rich and has a slightly different texture. It's real kid stuff! : )
