Bacon and Cheese Brunch Rolls
Has this ever happened to you? It's the weekend, you've slept too late for breakfast but wake ravenously hungry and can't wait until lunch. Here is something that might be just what you need, Bacon and Cheese Brunch Rolls.
These are so simple, your children will love making them. All you need are four ingredients that you will probably already have in your fridge:
Unroll the puff pastry and cut it into four equal pieces. On top of each piece of pastry, sprinkle a bed of grated cheese, top with a slice of bacon.
Fold the sides of the pastry over the cheese/bacon topping to make a parcel. With a fork, press the ends of the pastry together to keep the roll from opening when baking. (This might not work if you have over stuffed the pastry like I did...don't worry it will still taste yummy. The rolls just won't look as tidy after baking)

- 1 packet of ready-rolled puff pastry -use the all butter kind--Delish!
- Four rashers of Back Bacon or Canadian Bacon
- Cheddar Cheese - grated, about 1/2 cup or as much as you like
- 1 egg

Brush the tops of the pastry with a beaten egg to make the finished rolls shiny and extra crispy. Bake for about 20 - 25 minutes or until the pastry is puffed up and golden. Place rolls on a wire rack for a few minutes to let the molten cheese cool to eating temperature then- READY, STEADY, MUNCH!
These are great for picnics and packed lunches but I like them best hot from the oven!

ReplyDeleteI haven't tried making these with regular (streaky) bacon. You would have to render off some of the fat or it would make the pastry too greasy. Hmm... maybe cut the bacon into lardons, fry those and drain on a bit of paper towel before adding to the pastry-cheese parcel. Bacon Bits! Oh yum!
