Ham and Egg Brunch Sandwich

Let me set the scene for you.  It's 11:30 in the morning and I am standing with the fridge door open staring at nothing much more than milk, some condiment bottles and the last butt end of the Christmas ham.  What happened to all the food?  This time last week you couldn't shut the refrigerator door for all the leftovers.



I have eggs, mayonnaise and a tiny bit of ham.  That sounds like lunch/brunch to me! 


We've all experienced the empty fridge syndrome.  Sometimes it's a blessing in disguise and encourages you to do a bit of creative thinking, like making a ham and egg brunch sandwich.  Chop up a bit of ham, yes that tiny bit was all of the ham we had left.  Dice up a hard boiled egg or two. 


Mix the egg and ham together with a spoonful of mayonnaise.  Add some pepper and a sprinkling of chopped chives, if you have them.  


I actually had these herbs growing in the garden.  I know there isn't a lot of them but a bit of fresh green was all I needed.  


Spread on a some thick cut toast and munch away!  You know, that was really nice!  Who said there wasn't anything to eat in the fridge!

    1. Speaking of cooking... I am on a Quark hunt. So far I haven't been able to find it in my local shops but I will continue looking so I can try your recipe! : )
