Tipsy Apple Compote

The good news is we had a bumper crop of James Grieve apples.  The bad news is that James isn't a great keeper.  Time to find some new apple recipes.


In times of need I often turn to Martha Stewart.  I find she seldom lets me down.


We've had apple crumble, apple muffins, and baked apple.  Andy has put in an order for apple cake for Sunday afternoon tea so cake is out.   Hmmm.... how about this...  APPLE COMPOTE RECIPE with Calvados!


This tipsy apple compote was quick and easy to make.  I altered the recipe to make half a batch by using the following ingredients:

1 1/2 pounds of cooking apples- peeled, cored, and cut into 1 inch pieces
Juice from one small lemon
1/2 Tablespoon brandy or calvados
2 Tablespoons white sugar
A large pinch of cinnamon

Place all of the ingredients into a large sauce pan and simmer over a gentle heat until the apples are very soft.  Stored in an airtight container, this compote will keep in the refrigerator for one week.  Thanks Martha!
