Cinnamon Apple Shortcake
It's cold! I don't mean a little under the normal temperature. It's COLD! A sort of 'I want a baked apple' cold. So that's what I've baked today, Cinnamon Apple Shortcake.
It's so easy to make. Slice and core an apple for each person you are going to serve. I like to use eating apples for this. They don't cook down like cooking apples do and retain their slice shape.
Place the apple slices in an ovenproof dish. Sprinkle over a nice spoonful of brown sugar for each apple. Dust with some ground cinnamon and dot the top with butter. You can also squeeze a bit of lemon juice over the apple slices to keep them from going brown, but you don't have to.
Cover the dish with foil and bake at 375F/190C until the apples are soft and tender. The amount of time will vary with the variety of apple but it usually takes 30 - 45 minutes.
Slice open a scone, I had left over Mary Berry Scones from yesterday's tea. Spoon over the apple slices and baking juices.
Serve warm with pouring cream, clotted cream or vanilla ice cream! If this doesn't warm me up...nothing will!

Anything with cinnamon and apples gets my vote and I love your simple way of preparing and serving them - delicious! Off to the kitchen to hunt out some apples now...

I have always wanted to learn how to throw pots on the wheel. A couple of years ago the local council had a pottery course for beginners. I attended and was hooked. The council couldn't afford to continue the classes so I bought my own potter's wheel and a kiln. They are in my unheated garage so ceramic production ends when the weather gets cold. I hope to get back to my wheel soon. : )

It's a really good song. We call that an 'ear worm' when you hear a song you just can't stop singing. You Dad has ear worms! Eeeeuuuuwww!
