Pan Haggerty for Supper

Pan Haggerty, what a great name!  I must confess, it was the name that inspired me to give this RECIPE a try



Pan Haggerty is an old, traditional recipe from the Northern parts of England.  Some say it's specifically from Northumberland.  Made from just four basic ingredients and a bit of salt and pepper for seasoning, Pan Haggerty is the perfect comfort food.



All you need are finely sliced potatoes, an onion sauteed in a bit of butter...



Some grated Cheddar cheese, and a big oven proof frying pan.



Simply layer the potato, onion and cheese into the pan...



Top with another layer of potatoes, add a bit of seasoning, and you end up with this...

    1. Hurrah! It worked! I have three sizes of cast iron skillets and I cook almost EVERYTHING in them. I can't live without my Cast Iron. : )

  4. I didn't know Pan Haggerty, but there are similiar traditional recipes with potatoes and cheese known here, too. That is always interesting to see, how traditional food is sometimes almost the same in different countries.

    1. Recipes like this, using only three or four basic ingredients must be similar in many countries. I think the local cheese would make the biggest difference. I love this kind of food, simple but good.

  5. Oh dear I shouldn't have looked at this as it's making me hungry...I might have to head downstairs now and seek out cheese! This recipe looks really tasty and I agree the name makes you want to eat it too! :-)

    1. This is one of those great store cupboard recipes. We always have the ingredients handy and takes very little time to make. 'Colcannon' is another great name ...perhaps that's the next recipe to try! : )

  6. Kevin and I would love this dish! The girls might like it. I will have to remember this one for sure! I think it would be excelent with some bits of leftover ham thrown in. Yum-o!

    1. Andy and I were like two little pigs with this dish. It's so simple I can't believe we've never had it before. I can see this being a good Sunday brunch dish with fried or poached eggs, a good lunch dish with a crisp green salad, or a brilliant supper dish. It's traditionally served with sausages but a bit of ham would be delicious in it.
