Croque Madame Muffins for Lunch

Here is Rachel Khoo's clever take on a classic French lunch dish, Croque Madame Muffins.   These are the ones I made for our lunch today.  Rachel's are a bit more refined with the crusts trimmed off.  With or without crusts, this recipe is a winner!

    1. I think simple dishes made with good ingredients are the BEST! I used my homemade bread in place of the store bought white loaf. It made the 'crust' extra crispy.
